Rkatsiteli is a hardy, ancient white grape from Georgia, known for its high acidity and firm structure. It yields wines with crisp apple, quince, and herbal notes, often displaying a subtle bitterness. It's used in both dry wines and, traditionally, amber wines aged in qvevri.
