Starting with the finest 100% Weber Blue Agave plants, each plant is carefully selected and harvested by skilled jimadors, ensuring only the highest quality agave is used. The plants are then slow-roasted in traditional brick ovens for about 79 hours, allowing the agave to develop its unique flavors and aromas.
Once roasted, the agave is crushed using a volcanic stone wheel, or "tahona," which is laboriously turned by a skilled worker. This traditional method results in a more expressive tequila, as it allows for greater extraction of flavors from the agave.
The extracted juice is slowly fermented using proprietary yeast, cultivating the distinct characteristics that set the Roca Reposado apart. The fermentation process takes longer than usual, resulting in a tequila with a more complex flavor profile, rich in agave essence.
The tequila is then double-distilled in small copper pot stills, further enhancing the smoothness and purity of the final product. Finally, the Roca Reposado is aged in American oak barrels for a minimum of six months, adding depth and complexity to the spirit.
