Once harvested, the piñas are roasted for several days in a conical pit oven, imparting a unique smoky flavor to the mezcal.
After the roasting process, the piñas are crushed by a traditional Tahona stone mill or using a mechanical shredder, depending on the artisan's preference. This step carefully extracts the sweet juices from the agave, which are then fermented with wild yeasts for a natural and authentic flavor profile.
Once fermentation is complete, the liquid is double-distilled in copper pot stills. This careful distillation process ensures the mezcal maintains its smoothness and captures the distinct flavors and characteristics of the Espadin agave. The resulting mezcal is then bottled, with each bottle hand-labeled and inspected to ensure the utmost quality.
