Shochu is a Japanese distilled spirit typically made from rice, barley, sweet potatoes, or buckwheat. It has a lower alcohol content than other spirits, usually around 25% ABV.

Shochu originated on the island of Kyushu in the 16th century. The base starch is broken down into sugars then fermented with koji rice. This mash is distilled once in a pot still. It is not aged before bottling.

Popular styles include:

  • Kome shochu - Made from rice. Light and smooth flavor. Most common type.
  • Mugi shochu - Made from barley. Rich, nutty, and earthy notes.
  • Imo shochu - Made from sweet potatoes. Clean taste sometimes compared to vodka.
  • Soboru shochu - Made from buckwheat. Strong buckwheat aroma and flavor.

In Japan, shochu is served neat, on the rocks, cut with hot water, or in cocktails. It can also be used in cooking. Shochu has seen rising popularity as an approachable spirit with versatility for sipping or mixing.
