Maraschino
Maraschino is a clear, dry Italian liqueur flavored with marasca cherries and their crushed pits. It originated in the port city of Zadar in modern-day Croatia during the 16th century.
Authentic maraschino is produced from the marasca cherry, a sour cherry variety grown along the Dalmatian coast. The cherries and crushed pits are distilled into a clear spirit, then sweetened with sugar syrup.
This gives maraschino a sharp, tangy cherry aroma and subtle almond flavor notes. It has a dry, balanced profile compared to syrupy cherry liqueurs.
Maraschino was traditionally consumed as a digestif or added to coffee. It became popular in classic cocktails like the Martinez, Brooklyn, and Aviation. A maraschino cherry garnish became iconic in drinks.
Luxardo is the most well-known brand today. As maraschino gained popularity in the 1800s, imitation versions were produced using other fruits and flavorings. But authentic Luxardo maintains the traditional marasca cherry base.
While maraschino liqueur fell out of favor for a period, its crisp cherry flavor and dry profile make it intriguing for modern cocktails. When used judiciously, it adds a subtle fruit complexity.
