Classification Bière de garde

  • Ales are a category of beer distinguished by the use of top-fermenting yeast strains that operate better at warmer temperatures, roughly 60-75°F.
  • Ales ferment faster than lagers. The warmer fermentation produces fruitier, more robust flavors and aromas.
  • Pale ales, IPAs, stouts, porters, brown ales, amber ales, wheat beers, and sour ales are all members of the ale family.
  • Ales encompass a diverse range of styles and flavors from hop-forward IPAs to malty British bitters to Belgian abbey ales.
  • Compared to lagers, ales generally have more complex malt and yeast characteristics and fuller body.
  • Historically the first type of beer brewed, ales predate lagers by thousands of years. Before refrigeration, top-fermenting yeasts were used.
  • The term "ale" was used to differentiate beers from non-hopped gruits in medieval times when hops gained popularity.
  • Ireland and Great Britain developed many distinct ale styles due to the cooler climate making lager brewing difficult.
  • Today ales remain the flagship beer of the craft brewing industry, which has experimented widely with new ale styles.
  • Major ale brands include Bass, Young’s, Fuller’s, and Boddington’s from England; Smithwick's and Guinness from Ireland.
